Northern Territory Food Safety Supervisor Requirements
Northern Territory food businesses must comply with Standard 3.2.2A of the Food Standards Code under the Food Act 2004 (NT). All Food Safety Supervisors must hold nationally accredited training.
Who needs a Food Safety Supervisor in the Northern Territory?
Under Standard 3.2.2A of the Food Standards Code — implemented in the Northern Territory through the Food Act 2004 (NT) — most food service and retail businesses must appoint a certified Food Safety Supervisor. NT Health administers food safety policy, with local councils and the NT Government’s Environmental Health branch conducting food business inspections.
The NT has a relatively small population concentrated in Darwin and Alice Springs, with many food businesses in remote and regional areas. Online FSS training is particularly relevant in the NT given the distances involved.
The FSS requirement applies to food businesses across all industry sectors:
- Hospitality — restaurants, cafes, hotels, clubs, pubs, takeaways, catering operations
- Retail — supermarkets, food retail outlets, delis, butchers
- Health and community services — aged care, hospitals, disability services, remote health facilities
- Food processing — food manufacturing and processing operations
- Transport and distribution — food logistics and storage businesses
What training is required in the Northern Territory?
The required training units in the NT depend on the sector:
- Hospitality (restaurants, cafes, caterers, takeaways): SITXFSA005 + SITXFSA006
- Retail: SIRRFSA001 — or SITXFSA005+SITXFSA006 are interchangeable
- Health and community services (aged care, hospitals, disability services, remote health facilities): HLTFSE001 + HLTFSE005 + HLTFSE007
Training must be delivered by a registered training organisation (RTO) on the ASQA National Register. The NT does not operate a territory-approved RTO list — any nationally registered RTO is accepted. Verify registration at training.gov.au.
Remote and regional food businesses
Many food businesses in the NT operate in remote communities, roadhouses, tourism destinations, and stations where access to in-person training is impractical. The fully online delivery model available from all major FSS providers means that a food business operator in Katherine, Tennant Creek, or a remote community can complete the entire course online and receive their certificate within days — without travelling to Darwin or interstate.
Category 1 and Category 2 businesses in the NT
Category 1 businesses process unpackaged potentially hazardous food — restaurants, cafes, caterers, aged care facilities, remote health service kitchens. They must have a certified FSS, provide food handler training to all food handlers, and maintain evidence records.
Category 2 businesses handle food at lower risk. They must have a certified FSS and ensure food handlers are appropriately trained.
